All the ship I have used so far only use dollars on board but there is a bank where you can change currency. Even in Europe it has always been the dollar at the moment a good rate of exchange but you can but your Euro's before you go and should you run short the bank on board can usually supply.

All ships operate a cashless system you have a card instead and pay your bill at the end of the cruise by credit card or cas.
