Besides the main dining room on Independence there is also the speciality restaurants $20pp cover charge - Portofinos and Chops - best food/steaks in there that I have ever tasted. There is also the American Diner experience called Johnny Rockets with a £3.95pp cover with the fattest juciest hamburgers.....and the staff doing an 'impromptu' dance on the tables - think Happy Days. The main dining room is good - remember they are doing mass catering for 3500 people. I do have the menues for a 7 night cruise but the formatting does not hold here so it would just be a mass of words - let me know if you want me to try.
I would say that the food and presentation is slightly better with Princess than RCI just as I would say that Celebrity food and selection is better than both of the others. Of course everything is subjective just as I dislike P&O food, presentation and selection whereas others seem to like it's blandness and ordinariness. The three first mentioned certainly do not use rechaufees (re-heats of yesterdays main food) as do P&O. Sorry I've gone off on one haven't I.....Neil Dow.
Although we have not yet cruised with Princess, we have experience of both RCI and Celebrity, so I can compare those two.
Without a doubt, in terms of meals, Celebrity are far superior to RCI (five course meals; individual menus; unwrapped butter; choice of rolls and breads; desserts shown to the table etc.) plus Celebrity staff are better trained in many overall aspects.
However, RCI are more 'fun' ships with a younger clientele, so each brand has merit, it depends what you are seeking.
Apologies if that sounds, stuffy: we really enjoyed one RCI cruise, The Brilliance of the Seas.
Recently our Celebrity Millennium cruise was cancelled and we were transferred on to Freedom of the Seas, which we did not enjoy. The ship was a little too large (but we enjoyed a superior level of fitness - all that walking!) and the food definitely down market, as were some of the passengers!
Freedom of the Seas did have outstandingly good entertainment - the ice show was excellent and the theatre shows slightly better than those with Celebrity cruises (although we're pretty sure that one of Freedom's shows was copied from a Celebrity ship).

Me and my husband had never cruised before last year and we saild on Legend of the Seas with Royal Caribbean - We could fault nothing on the ship. the food was fantastic. So much so, that we are cruising on the Independence in August 2008 - Can't wait.
