We sailed into New York in April this year on QE2 docking in Manhatten. Thick fog when we arrived but the Statue of Liberty was just seen in the fog. QM2 docks in Brooklyn so you are a bit further away but you should still be able to seee it on the port side. The fog lifted later in the morning and the day we had there was quite pleasant. The first two days sailing out from New York to UK was thick fog and quite cold. Tipping is automatic around $10 per person perday, but varies depending on your cabin. See Cunard website.
